Carissimi amici!
Tiramisù is one of the most beloved Italian desserts, and believe it or not, it’s also one of the easiest to make. With just a few simple ingredients and either an electric mixer or a strong pair of hands for whisking, you’ll have an irresistible dessert in no time.
Search for a tiramisù recipe, and you’ll find countless variations, different ingredients, methods, or quantities. But today, we’re sharing Italology’s original recipe: fluffy, light, and delightfully delicious! Follow the steps below, and you’ll be amazed at how simple it is to create this classic Italian masterpiece.

Tools You’ll Need:
- Stand mixer or hand mixer: For whisking egg yolk and sugar, and egg whites to perfection. You can whisk by hand, but be ready for a workout!
- Rubber spatula: To scrape down the sides of the bowl and gently fold the mascarpone cream.
- 13″x9″ pan (or similar): To assemble your tiramisù.
- Small sifter or fine sieve: To dust the cocoa powder evenly on top.
Ingredients:
- 6 eggs
- 6 tablespoons sugar
- 24 oz mascarpone cheese
- 2 packets of savoiardi biscuits (ladyfingers)
- 5 cups coffee (brewed and cooled)
- Cocoa powder (for the finishing touch)

Instructions:
- Prepare the coffee and set it aside to cool.
- Separate the eggs into yolks and whites.
- In a mixing bowl, beat the egg yolks and sugar with an electric mixer on high speed until the mixture is pale and fluffy (about 10 minutes).
- Add the mascarpone cheese to the yolk mixture and mix on medium speed until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the mascarpone mixture using a rubber spatula. Be careful not to deflate the mixture. Your tiramisù cream is now ready!
- Quickly dip each ladyfinger (sugar-coated side down) into the coffee for about 3 seconds and arrange them in a single layer in the pan, sugar-coated side up.
- Spread half of the mascarpone filling over the ladyfingers.
- Repeat with another layer of coffee-dipped ladyfingers and top with the remaining mascarpone filling.
- Dust with cocoa powder using a sifter or fine sieve.
- Chill in the refrigerator, covered, for at least 2–3 hours before serving.
Pro Tip:
- For individual servings, layer the ingredients in small cups instead of a large pan, adjusting the portion sizes as needed.
- To add a more robust flavor, stir a splash of rum, Kahlúa, or Baileys into the coffee before dipping the ladyfingers.
